Hummus

This Mediterranean and Arabic staple has worked its way into the diets of people from a multitude of countries and all walks of life. In our own variation we love the addition of parsley and honey to give it a sweet and fragrant kick. Hummus is traditionally made with a pestle and mortar but a food processor really saves a lot of effort.

Ingredients

Serves 4 – Time 10 Minutes

500g Pre-prepared Chickpeas
1 Large Clove of Garlic
1 Large Lemon
5 Tbsp Olive Oil
1 Tbsp Tahini
1 Tsp Paprika
1 Tsp honey (Optional)
1 Medium Handful of Parsley (Optional)

Instructions

Add the chickpeas and tahini to the food processor with 50ml of boiling water. This helps soften the chickpeas for a smoother texture. Blitz the mixture to a paste and add the garlic, lemon juice, oil, paprika, honey and parsley and blend until smooth.

Season to your taste and serve with hot fresh pitta bread.

TIP – Replace the tahini with peanut butter for an interesting twist.
