This sumptuous cold weather comfort recipe hits all the right notes. With sweet and aromatic tender pears glazed in honey when no matter how large your main course, you will always have space for this treat at the end of a meal. You will want to use slightly under-ripe pears so they hold their shape and texture whilst cooking.

Serves 4 – Time 15 minutes
4 Large Firm Pears
2 Tbsp of Honey
1 Medium Handful of Pine Nuts
2 Tsp of Cinnamon
50g Salted Butter
4 Fresh Mint Leaves
Preheat your oven to 200 degrees celsius or 390 degrees fahrenheit
Whist the oven is heating up half and de-core your pears and place them skin side down on a backing tray with a lip. Cube the butter and drop it on and around the pears. Drizzle the honey generously over the pears and sprinkle the cinnamon on top.
Put the pears in the oven for 10 minutes until they begin to turn golden and sticky.
Whilst the Pears are cooking dry toast the pine nuts in a heavy frying pan until golden brown. Be careful not to burn them.
Serve with the scattered pine nuts, some natural yogurt, finely chopped mint and a squeeze of lemon juice.
TIP: This dessert tastes great with yogurt or vanilla ice cream for an even more indulgent hit. It also works if you replace the pine nuts for walnuts.
