Fluffy white rice is brought to life by juicy raisins and aromatic cinnamon. A few simple touches really does transform a humble pot of rice, and this version is great with any meat or fish dish.

Serves 4 – Time 15 Minutes
1 Cup of Jasmine Rice
2 Cinnamon Sticks
Add one cup of rice to 2 cups of boiling water along with the raisins. Break the cinnamon sticks in half and add to the pan. Bring the water to the boil, stir once and leave it for 8 minutes on a low simmer.
When the rice is light and the grains separate easily, take the rice off the heat and cover with a tea towel to absorb any excess moisture for 5 minutes.
Serve with plain yogurt and a squeeze of lemon.
TIP: You can use ground cinnamon if you don’t have sticks.
